This recipe will yield 6-8 disposable aluminum pans. These work perfect Disposable Aluminum 5 3/4 Extra Deep Meat/Pot Pie Pan #2400 by Durable Packaging (100). You can also do casserole style in a large baking dish.
- 1 stick of vegan butter (plus 3 Tablespoons for brushing tops)
- 1/2 C Flour (yes you can use Gluten Free Flour)
- 1 Onion (diced)
- 3 Celery Stalks (diced)
- 4 Carrots (peeled and diced)
- 3C Vegetable Broth
- 3 Potatoes (peeled and small diced)
- 2 Bay Leaves
- 1C Frozen Peas
- 1C Cut Green beans (fresh or Frozen)
- 1-2C Broccoli Florets
- 1/2C Almond Milk
- *Optional Fresh Herbs; Rosemary, Thyme, Parsley
- 1T Poultry Seasoning (Yes its Vegan despite the name)
- Salt & Pepper tt
- 1 Recipe for Pie Crust OR store bought pie crust in the freezer aisle. There are vegan ones.
Preheat oven to 350F
Make a blonde roux (no color just enough to incorporate butter and flour). Melt butter in a large dutch oven or pot. Add flour, cook for 3-4 minutes by constantly moving with a wooden spoon or spatula. Add onions celery and carrot. Cook within the roux until softened. Grab a whisk and slowly add vegetable broth while whisking. Once roux and liquid comes together and is smooth Add Bay Leaf, and Potatoes. Cook for 5 minutes to allow potatoes to soften slightly. Now add remaining vegetables, spices and herbs. Allow mixture to come to a complete boil-constantly stir, this will thicken the mixture. It should be a smooth gravy-like consistency with chunky veggies. Stir in almond milk. Check seasoning and turn off the heat. Once slightly cooled place into aluminum pans or baking dish.
Prepare dough. Roll out pie dough and use the circle part of your aluminum pan and cut into circles. Place each circle on top of prepared pans. Take a fork and press along the edges to seal the dough to the pans. Brush tops with melted butter. Place all pies on a sheet pan. Place into oven until golden about 20-25 minutes.
Remove and LET COOL for 10-15 minutes before serving. These things and awesome but are deadly hot!
